Steps
You’ll need: bowl, rolling pin, cast-iron skillet with a lid.
- Stir the yeast and sugar into the warm water and let it stand 5 minutes. Add the yogurt, oil, salt and flour and knead 5 minutes into a soft dough.
- Cover and let it rise until doubled, about 1½ hours.
- Divide into 8 balls. Roll each into an oval about ¼ inch thick.
- Heat the skillet over medium-high until very hot. Cook one naan at a time: when big bubbles form, about 1 minute, flip it, cover the pan, and cook 1 minute more, until charred in spots.
- Brush with butter (stir the garlic into the butter for garlic naan) and keep them wrapped in a towel.
⚖️ ScalingEach naan is an eighth of the dough.
🛡 SafetyDon’t taste raw dough or batter, and wash your hands and the counter after handling flour: raw flour can carry germs that only baking kills (FDA).
