How long it keeps

  • Refrigerator: cook it right away, or refrigerate it covered up to 3 days. Don’t leave it drying at room temperature more than 2 hours (Iowa State Extension).
  • Freezer: dust with flour, make loose nests, freeze on a tray, then bag them, for 3 to 6 months. Cook straight from frozen, a minute or two longer.

Steps

You’ll need: bowl, rolling pin, sharp knife or pizza cutter.

  1. Beat the eggs, milk and salt in a bowl. Stir in the flour to make a stiff dough.
  2. Knead on a floured counter about 5 minutes until smooth. Cover and rest 20 minutes.
  3. Roll it out about ⅛ inch thick. Let the sheet air-dry 20 to 30 minutes, turning once, until it feels leathery but still bends.
  4. Dust with flour, roll it up loosely, and cut ¼-inch strips (or wider, if you like them that way). Shake them apart.
  5. Cook in boiling salted water or simmering broth until tender, 4 to 8 minutes depending on thickness.
⚖️ ScalingScale by whole eggs: each egg goes with about 125 g (1 cup) of flour and 2 tablespoons of milk.
🛡 SafetyDon’t taste raw dough or batter, and wash your hands and the counter after handling flour: raw flour can carry germs that only baking kills (FDA).
🛡 SafetyThe drying time on the counter is part of the 2-hour limit for raw egg dough (Iowa State Extension).
