Steps

You’ll need: cutting board, sharp knife.

  1. Spread each tortilla with cream cheese all the way to the edges (it holds the roll together).
  2. Layer turkey, provolone and spinach over the bottom two-thirds. Lay a few cucumber strips near the bottom edge.
  3. Roll up tightly from the bottom. Wrap in plastic and chill 15 minutes if you have time; they slice more neatly.
  4. Cut into 1-inch pinwheels. Pack with an ice pack in an insulated lunch bag.
Make aheadRolled, wrapped wraps keep 1 day in the fridge; slice in the morning.
