Steps
You’ll need: large skillet with lid, whisk, instant-read thermometer.
- Pat the chops dry. Season with the salt, pepper, paprika and garlic powder, then dredge lightly in 1/4 cup flour. Wash your hands.
- Heat the oil in a large skillet over medium-high heat. Brown the chops 3 minutes per side. Move them to a plate; they finish cooking later.
- Lower the heat to medium and add the butter, onions and mushrooms. Cook 10 minutes, stirring, until soft and golden. Add the garlic for 1 minute.
- Sprinkle in 2 tablespoons flour and stir 1 minute. Slowly whisk in the broth and milk, add the thyme and simmer until it starts to thicken.
- Nestle the chops and their juices into the gravy. Cover and simmer gently 12 to 15 minutes, until an instant-read thermometer in the thickest part away from the bone reads 145°F.
- Let the chops rest 3 minutes in the pan, then serve with plenty of gravy.
🌡 Safe temperaturesBeef, pork or lamb steaks, chops and roasts 145°F with a 3-minute rest. Check the thickest part with a food thermometer (USDA). More on food safety.
Make aheadSlice the onions and mushrooms up to 2 days ahead.
❄️ FreezerFreeze chops in their gravy for 2 to 3 months for best quality. Thaw in the fridge and reheat to 165°F.
↺ LeftoversReheat chops in the gravy to 165°F; slice and serve over rice.
🧒 With kidsCut the meat off the bone and into small pieces. The gravy is great over mashed potatoes.
Gluten-free swapUse cornstarch: skip the dredge, and stir 1 tablespoon cornstarch into the milk to thicken the gravy.
