Steps

You’ll need: 9-by-13-inch baking dish, saucepan, whisk, aluminum foil, instant-read thermometer.

  1. Heat the oven to 375°F and butter the baking dish.
  2. Melt the butter in a saucepan over medium heat. Cook the onion 4 minutes. Whisk in the flour for 1 minute, then slowly whisk in the milk. Simmer, whisking, until thickened, about 5 minutes. Off the heat, stir in the salt, pepper, mustard and 1 cup of the cheese.
  3. Layer half the potatoes in the dish, scatter the ham over and pour on half the sauce. Repeat with the rest of the potatoes and sauce.
  4. Cover with foil and bake 50 minutes. Uncover, sprinkle with the rest of the cheese and bake 20 to 25 minutes more, until the potatoes are tender and the top is golden. The center should reach 165°F.
  5. Let stand 10 minutes before serving.

🌡 Safe temperaturesCasseroles 165°F. Check the thickest part with a food thermometer (USDA). More on food safety.

Make aheadAssemble up to 1 day ahead (the sauce keeps the potatoes from browning) and refrigerate. Add 10 to 15 minutes to the covered bake.
↺ LeftoversReheat portions to 165°F in the microwave or a covered dish in the oven.
🧒 With kidsKids can layer the potato slices. A grown-up slices the potatoes; a mandoline needs a guard.
Gluten-free swapUse 3 tablespoons cornstarch in place of the flour, whisked into cold milk; check the ham label.
