Steps
You’ll need: large rimmed baking sheet, blender or bowl and fork, medium bowl.
- Heat the oven to 425°F.
- Toss the cauliflower and poblano with the oil, chili powder, cumin, garlic powder and salt on the baking sheet. Spread in one layer and roast 20 to 25 minutes, stirring once, until tender and browned at the edges.
- While it roasts, toss the cabbage with 2 tablespoons lime juice and 1/4 teaspoon salt.
- Blend or mash the avocado with the sour cream, 1 tablespoon lime juice and a pinch of salt until smooth.
- Warm the tortillas in a dry skillet or wrapped in a damp towel in the microwave. Fill with cauliflower, slaw and crema.
Make aheadMake the slaw up to 1 day ahead. The crema keeps 1 day pressed under plastic wrap so it stays green.
↺ LeftoversReheat the cauliflower in a hot oven or skillet and serve over rice as a bowl.
🧒 With kidsSet everything out taco-bar style so kids build their own. Leave the poblano strips on the side for anyone who wants it milder.
Dairy-free swapSkip the sour cream and blend the avocado with 2 tablespoons water and the lime juice.
