Steps

You’ll need: 9-inch pie plate, large bowl, whisk, rimmed baking sheet.

  1. Heat the oven to 425°F. Fit the crust into the pie plate and crimp the edge. Set the plate on a baking sheet.
  2. Whisk the pumpkin, evaporated milk, eggs, sugar, salt and spices until smooth. Pour into the crust.
  3. Bake 15 minutes, then lower the oven to 350°F and bake 40 to 50 minutes more, until the edges are set, the center jiggles only slightly and a knife near the center comes out clean (at least 160°F).
  4. Cool on a rack about 2 hours, then refrigerate. The filling finishes setting as it cools.

🌡 Safe temperaturesEgg dishes 160°F. Check the thickest part with a food thermometer (USDA). More on food safety.

Make aheadBake up to 2 days ahead. Pumpkin pie is an egg custard, so keep it in the fridge, covered, once cool and up to 3 to 4 days.
❄️ FreezerFreeze the baked, cooled pie, wrapped well, for up to 1 month. Thaw overnight in the fridge.
↺ LeftoversKeep slices refrigerated and enjoy cold or at room temperature within 4 days.
🧒 With kidsKids can whisk the filling and help crimp the crust. If a crust edge browns fast, a grown-up can cover it with foil strips.
Dairy-free swapUse full-fat coconut milk instead of evaporated milk and skip the whipped cream.
Gluten-free swapUse a gluten-free pie crust.
