Steps

You’ll need: large pot, large skillet or wok, colander, small bowl, tongs.

  1. Cook the spaghetti in boiling water by the package directions. Drain, rinse briefly with warm water and toss with a few drops of the sesame oil.
  2. Stir the soy sauce, hoisin, the rest of the sesame oil and the brown sugar in a small bowl.
  3. Heat the oil in a large skillet over medium-high heat. Cook the pork, breaking it up, until browned and no pink remains (160°F), about 7 minutes. Add the garlic and ginger for 30 seconds.
  4. Add the carrot, cabbage and bok choy stems and stir-fry 3 minutes. Add the bok choy leaves and green onions for 1 minute.
  5. Add the noodles and sauce and toss with tongs until everything is hot and coated, about 2 minutes.

🌡 Safe temperaturesGround pork or pork sausage 160°F. Check the thickest part with a food thermometer (USDA). More on food safety.

Make aheadMix the sauce and cut the vegetables up to 2 days ahead. Leftovers keep 3 days in the fridge; reheat to 165°F.
↺ LeftoversPack for lunch and reheat to 165°F, or eat cold like a noodle salad.
🧒 With kidsKids can shake the sauce in a jar and toss the noodles with tongs once things cool a bit.
Gluten-free swapUse rice noodles, tamari labeled gluten-free and a gluten-free hoisin.
Meatless swapUse 14 ounces cubed firm tofu, browned, instead of the pork.
