Steps

You’ll need: large heavy skillet, instant-read thermometer, tongs.

  1. Pat the chops dry. Mix the salt, pepper, garlic powder and paprika and rub on both sides.
  2. Heat the oil in a heavy skillet over medium-high heat. Cook the chops 4 to 5 minutes per side, until browned and a thermometer in the thickest part reads 145°F.
  3. Move the chops to a clean plate and let them rest at least 3 minutes.
  4. Lower the heat to medium. Add the broth, mustard and honey to the pan and scrape up the browned bits. Simmer 2 minutes, then swirl in the butter. Spoon over the chops.

🌡 Safe temperaturesBeef, pork or lamb steaks, chops and roasts 145°F with a 3-minute rest. Check the thickest part with a food thermometer (USDA). More on food safety.

Make aheadSeason the chops up to 1 day ahead and refrigerate covered.
↺ LeftoversSlice thin for sandwiches or fried rice; reheat to 165°F.
🧒 With kidsSlice the chop into thin strips for younger children; 145°F pork can look slightly pink in the center and is safe after the rest.
Dairy-free swapSkip the butter in the sauce.
Gluten-free swapUse gluten-free broth.
