Steps
You’ll need: large deep skillet or Dutch oven with lid, instant-read thermometer, medium saucepan.
- Season the chicken with the salt. Heat the oil in the pan over medium-high heat and brown the chicken in two batches, about 5 minutes each. Move to a plate. Wash your hands after handling raw chicken.
- Lower the heat to medium. Cook the onion 5 minutes, then the garlic, ginger, cumin, cinnamon, paprika and turmeric for 1 minute.
- Add the tomatoes, broth, chickpeas and apricots and scrape up the browned bits. Return the chicken with its juices.
- Cover and simmer 20 minutes, until the chicken is tender and a thermometer reads 165°F. Stir in the lemon juice.
- Meanwhile cook the couscous. Serve the chicken over couscous, topped with almonds and cilantro.
🌡 Safe temperaturesChicken 165°F. Check the thickest part with a food thermometer (USDA). More on food safety.
Make aheadMake up to 3 days ahead; the flavor improves. Add the almonds when serving.
❄️ FreezerFreeze the chicken stew (without couscous) up to 3 months. Thaw in the fridge and reheat to 165°F.
↺ LeftoversReheat to 165°F and pack with couscous for lunch.
🧒 With kidsThe spices are warm, not hot. Whole nuts and seeds are a choking risk for children under 4; chop them fine or leave them out.
Gluten-free swapServe over rice or quinoa instead of couscous, and use gluten-free broth.
Nut free swapLeave off the almonds.
