Steps
You’ll need: large pot, large bowl, slotted spoon, baking sheet.
- Mash the cottage cheese with a fork until the curds are small. Stir in the eggs, salt and sugar, then the flour, until a soft, sticky dough forms.
- Divide the dough in 4. On a well-floured counter, roll each piece into a rope about 1 inch thick, then press it slightly flat and cut on an angle into 1-inch pieces.
- Bring a large pot of salted water to a boil. Cook the dumplings in 2 batches: once they float, cook 2 minutes more, until puffed and cooked through. Lift out with a slotted spoon.
- Toss with melted butter and sprinkle with the cinnamon and sugar. Serve with sour cream if you like.
Make aheadCooked dumplings keep 3 days in the fridge; brown them in butter in a skillet to reheat.
❄️ FreezerFreeze uncooked dumplings on a floured tray, then bag, for up to 2 months. Boil from frozen, adding 2 minutes.
↺ LeftoversBrown leftover dumplings in butter for a crisp breakfast.
🧒 With kidsKids can roll the ropes and cut the dumplings with a butter knife.
Gluten-free swapUse a gluten-free flour blend; the dough will be softer.
