Steps
You’ll need: grill or broiler pan, mixing bowl, box grater, instant-read thermometer.
- Stir the yogurt, cucumber, garlic, lemon juice and salt together and chill.
- Mix the lamb, onion, garlic, parsley, mint, spices, salt and pepper with your hands until well combined. Shape into 8 long ovals about 4 inches long (around skewers if you have them). Wash your hands.
- Heat the grill or broiler to medium-high. Cook the kofta 10 to 12 minutes, turning a few times, until browned and an instant-read thermometer in the center reads 160°F.
- Tuck 2 kofta into each warm pita with tomato, onion and a big spoonful of yogurt sauce.
🌡 Safe temperaturesGround lamb 160°F. Check the thickest part with a food thermometer (USDA). More on food safety.
Make aheadShape the kofta and make the sauce up to 1 day ahead; keep them covered in the fridge.
❄️ FreezerFreeze shaped raw kofta on a tray, then bag them, for 3 to 4 months. Thaw in the fridge before cooking.
↺ LeftoversSlice leftover kofta over rice or a salad with the sauce; reheat to 165°F.
🧒 With kidsMake small round patties instead of long kofta and serve with pita triangles for dipping in the sauce.
Dairy-free swapUse a dairy-free yogurt, or hummus, for the sauce.
Gluten-free swapServe over rice or salad instead of pita.
Meatless swapUse falafel or grilled vegetables in the pitas.
