Steps

You’ll need: skillet or grill pan, large bowl, small bowl, instant-read thermometer.

  1. Pound the chicken to an even 3/4-inch thickness between sheets of plastic wrap. Rub with the oil and season with salt, pepper and garlic powder.
  2. Cook in a skillet or grill pan over medium-high heat 5 to 6 minutes per side, until 165°F in the thickest part. Rest 5 minutes, then slice.
  3. Whisk the dressing ingredients together. (Using mayonnaise instead of raw egg yolk keeps it safe to make ahead.)
  4. Toss the romaine with about 2/3 of the dressing. Top with chicken, croutons and shaved Parmesan, and pass the rest of the dressing.

🌡 Safe temperaturesChicken 165°F. Check the thickest part with a food thermometer (USDA). More on food safety.

Make aheadThe dressing keeps 5 days in the fridge. Cook the chicken up to 3 days ahead.
↺ LeftoversPack dressing separately so the lettuce stays crisp.
🧒 With kidsServe the lettuce, chicken and croutons separately with dressing for dipping.
Gluten-free swapSkip the croutons and check the Worcestershire label.
