Steps
You’ll need: large heavy pot or Dutch oven, immersion blender or blender, vegetable peeler.
- Melt the butter in a large pot over medium heat. Cook the onion and carrot until soft, about 6 minutes. Add the garlic for 30 seconds.
- Add the squash, apple, broth, salt, nutmeg and pepper. Bring to a boil, then lower the heat, cover and simmer 20 to 25 minutes, until the squash is very tender.
- Blend until smooth with an immersion blender. If using a countertop blender, let the soup cool 5 minutes, fill the jar no more than half full, and hold the lid down with a towel.
- Stir in the cream if using and taste for salt. Top with pumpkin seeds if you like.
Make aheadKeeps 4 to 5 days in the fridge. Reheat to 165°F.
❄️ FreezerFreeze before adding cream for 2 to 3 months for best quality.
↺ LeftoversPack hot in a preheated insulated food jar with a grilled cheese sandwich.
🧒 With kidsMicrowave the whole squash 3 minutes to make peeling easier for the grown-up. Kids can measure and stir.
