Steps
You’ll need: large skillet, rimmed baking sheet, foil or freezer bags.
- Heat the oven to 425°F. Toss the hash browns with the oil on a baking sheet and bake 20 minutes, until crisp.
- Brown the sausage in a large skillet, breaking it up, until no pink remains and it reaches 160°F. Drain on paper towels. Wipe out the skillet.
- Whisk the eggs, milk, salt and pepper. Scramble in the skillet over medium-low heat until no liquid egg remains. Let everything cool 10 minutes.
- Divide the potatoes, sausage, eggs and cheese among the tortillas. Fold in the sides and roll tightly.
- Wrap each in foil or plastic and freeze. To reheat: unwrap, wrap in a damp paper towel and microwave 1 1/2 to 2 1/2 minutes, turning once, until 165°F in the center.
🌡 Safe temperaturesGround pork or pork sausage 160°F; Egg dishes 160°F; Leftovers, reheated 165°F. Check the thickest part with a food thermometer (USDA). More on food safety.
