Steps

You’ll need: large pot or Dutch oven, wooden spoon.

  1. Heat the oil in a large pot over medium-high heat. Add the beef, onion and bell pepper and cook, breaking up the meat, until no pink remains and the beef reaches 160°F, about 10 minutes. Spoon off extra fat.
  2. Add the garlic, chili powder, cumin, oregano, paprika, salt and pepper. Cook 1 minute, stirring.
  3. Stir in the crushed and diced tomatoes, beans, broth and brown sugar. Bring to a boil, then lower the heat, partly cover and simmer 30 to 40 minutes, stirring now and then, until thick.
  4. Taste and add more salt or chili powder if you like. Serve with toppings.
  5. Slow cooker: brown the beef and vegetables first (steps 1 and 2), then put everything in the cooker and cook on low 6 to 8 hours.

🌡 Safe temperaturesGround beef 160°F. Check the thickest part with a food thermometer (USDA). More on food safety.
